Ingredients
- Nordic Whole Grain Rolled Oats – 80g
- Chicken broth – 720mL
- Shredded chicken – 150g
- Ginger – 5g
Procedures
- Prep the ginger by peeling it and cutting it into very thin matchsticks or mincing it finely to ensure the flavor infuses quickly.
- Pour the chicken broth into a medium pot and add the prepared ginger.
- Bring the broth to a rolling boil over medium-high heat, allowing the ginger to steep for about 1 minute.
- Stir in the rolled oats, ensuring they are well-distributed throughout the boiling liquid.
- Reduce the heat to low to maintain a steady, gentle simmer; this prevents the oats from sticking to the bottom of the pot.
- Cook for 8 minutes, stirring occasionally. The oats will begin to break down and thicken the broth into a silky porridge.
- Add the shredded chicken into the pot during the last 2 minutes of cooking to ensure it is heated through completely.
- Check the seasoning—depending on the saltiness of your broth, you may want to add a pinch of salt or white pepper at this stage.
- Remove from the heat once the porridge reaches your desired consistency (it will continue to thicken slightly as it cools).
- Serve warm in a deep bowl, perhaps topped with a few drops of sesame oil or fresh scallions.
