Procedures

  1. Prep the ginger by peeling it and cutting it into very thin matchsticks or mincing it finely to ensure the flavor infuses quickly.
  2. Pour the chicken broth into a medium pot and add the prepared ginger.
  3. Bring the broth to a rolling boil over medium-high heat, allowing the ginger to steep for about 1 minute.
  4. Stir in the rolled oats, ensuring they are well-distributed throughout the boiling liquid.
  5. Reduce the heat to low to maintain a steady, gentle simmer; this prevents the oats from sticking to the bottom of the pot.
  6. Cook for 8 minutes, stirring occasionally. The oats will begin to break down and thicken the broth into a silky porridge.
  7. Add the shredded chicken into the pot during the last 2 minutes of cooking to ensure it is heated through completely.
  8. Check the seasoning—depending on the saltiness of your broth, you may want to add a pinch of salt or white pepper at this stage.
  9. Remove from the heat once the porridge reaches your desired consistency (it will continue to thicken slightly as it cools).
  10. Serve warm in a deep bowl, perhaps topped with a few drops of sesame oil or fresh scallions.
