Procedure

1Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.

2Reserve at least 120mL of the starchy pasta water before draining the noodles.

3Heat 15mL of olive oil and 20g of butter in a large skillet over medium-high heat.

4Add the fresh shrimp to the skillet in a single layer and sear for 1 to 2 minutes per side until pink and opaque.

5Remove the shrimp from the pan and set them aside on a plate to prevent overcooking.

6In the same pan, add the remaining 20g of butter and the minced garlic, sautéing for 1 minute until fragrant but not browned.

7Sprinkle 10g of Menu Shrimp Powder Mix 1KG and the red chili flakes into the melted garlic butter and stir rapidly to form a savory paste.

8Pour in the reserved pasta water and the lemon juice, whisking constantly until the Menu Shrimp Powder Mix 1KG is fully dissolved and the sauce emulsifies.

9Add the cooked pasta and the seared shrimp back into the skillet, tossing vigorously to coat every strand in the shrimp-garlic sauce.

10Turn off the heat and sprinkle the grated Parmesan cheese over the pasta, tossing again until the cheese melts into a creamy glaze.

11Garnish with freshly chopped parsley and an extra crack of black pepper before serving.
