Procedure

1Prepare the Passion Fruit Jelly: In a pot, combine 400mL of water, 40g of sugar, and 25g of Menu Magic Jelly Passion Fruit. Stir until fully dissolved.

2Bring to a boil over medium heat, stirring for 2–3 minutes.

3Pour into a flat tray. Let it cool, then refrigerate for 45 minutes until very firm.

4Once set, cut the Menu Magic Jelly Passion Fruit into small, shimmering 1cm cubes.

5Brew the Tea: Steep the peach tea bags in 500mL of hot water for 5 minutes. Remove the bags and stir in the honey or peach syrup while the tea is warm.

6Chill: Allow the peach tea to cool to room temperature, then refrigerate until cold.

7Assemble: Drop a generous scoop of the golden passion fruit jelly cubes into the bottom of a tall glass.

8Add 2–3 slices of peaches to the glass.

9Fill the glass to the brim with ice cubes.

10Pour the chilled peach tea over the ice and jelly.

11Garnish: Top with a sprig of mint or a slice of lemon to highlight the citrus notes in the passion fruit.

12Serve with a wide straw to enjoy the chewy, tart jelly alongside the sweet tea.
