Iced Lemon Tea with Jelly

Procedure

1Prepare the Clear Jelly: In a pot, combine 500mL of water, 40g of sugar, and 25g of Menu Magic Jelly Clear Stir until the powder is fully dissolved.

2Bring to a boil over medium heat, stirring constantly for 2 minutes until the liquid is crystal clear.

3Pour into a flat tray (about 1cm thickness). Let it cool, then refrigerate for 30 minutes until very firm.

4Once set, cut the Menu Magic Jelly Clear into small, shimmering 1cm cubes.

5Brew the Tea: Steep the tea bags in 500mL of hot water for 5 minutes. Remove the bags.

6Sweeten & Sour: While the tea is warm, stir in the remaining 60g of sugar (or honey) and the fresh lemon juice. Stir until the sugar is completely dissolved.

7Chill: Allow the tea to cool to room temperature, then refrigerate until cold.

8Assemble: Drop a generous scoop of the "crystal" jelly cubes into the bottom of a tall glass.

9Fill the glass to the brim with ice cubes.

10Pour the chilled lemon tea over the ice and jelly.

11Garnish: Slide a few lemon slices between the ice and the glass and top with a sprig of mint.

12Serve with a wide straw to catch the clear jelly cubes in every sip.
