Grass Jelly Milk Tea

Procedure

1Prepare the Black Jelly: In a pot, combine 500mL of water, 50g of brown sugar, and 25g of Menu Magic Jelly Black. Stir until dissolved.

2Bring to a boil over medium heat, stirring for 2–3 minutes.

3Pour into a flat rectangular tray. Let it cool, then refrigerate for 45 minutes until very firm.

4Once set, cut the Menu Magic Jelly Black into long, thin rectangular strips or 1cm cubes.

5Brew the Tea: Steep the black tea bags in 400mL of freshly boiled water for 5–8 minutes. You want a very strong concentrate.

6Sweeten: While the tea is hot, stir in the remaining 100g of brown sugar and the condensed milk until fully incorporated. Let the tea cool to room temperature

7The Mix: Add the evaporated milk to the cooled tea base and stir. This creates that rich, "creamy-tan" color classic to milk tea.

8Assemble: Place a generous amount of the black jelly strips into the bottom of a tall glass.

9Fill the glass with ice cubes.

10Pour the creamy milk tea over the jelly.

11Give it a gentle swirl to see the black jelly "shards" marble through the tea.

12Serve with a wide "boba" straw.
