Calamansi & Honey Tea
A soothing drink made with the bright citrus flavor of calamansi and the natural sweetness of honey mixed into tea. It has a light, refreshing taste with a gentle balance of sweet and tangy notes, making it a comforting drink served hot or cold.

Procedure

1Prepare the Yellow Jelly: In a small pot, combine 300mL of water, 30g of sugar, and 12.5g of Menu Magic Jelly Yellow

2Stir while cold until dissolved, then bring to a gentle boil for 2 minutes over medium heat.

3Pour into a flat container (about 1cm thickness) and let it set at room temperature, then refrigerate for 30 minutes until very firm.

4Once set, cut the Menu Magic Jelly Yellow into tiny cubes or thin "noodles." Set aside.

5Prepare the Tea Base: Steep the tea bags in 500mL of hot water for 3–5 minutes. Remove the bags and stir in the honey while the tea is still warm so it dissolves easily.

6Add the Citrus: Once the honey-tea mixture has cooled down, stir in the fresh calamansi juice. (Adding it to hot tea can sometimes make the juice taste slightly bitter).

7Assemble: Drop a generous scoop of the yellow jelly sinkers into the bottom of a tall glass.

8Fill the glass to the brim with ice cubes.

9Pour the Calamansi & Honey tea over the ice.

10Garnish with a few slices of fresh calamansi and a sprig of mint for a fresh aroma.

11Stir gently and enjoy!
