Procedure

1Preparation: Clean 500g of crab clusters. Crack the shells slightly using a cracker or the back of a knife (this allows the flavor to get inside).

2Initial Sear: Sauté the crab in a wok with 1 tbsp oil and 2 minced garlic cloves for 3–4 minutes until hot. Remove crab.

3The Sauce: In the same wok, add 3 tbsp butter. Once melted, add 4 tbsp Menu Salted Egg Powder Mix 500G. Whisk until it creates a massive amount of golden foam.

4The Finish: Return the crab to the wok. Toss and turn the clusters so the foam fills the cracks in the shells. Serve immediately while the sauce is light and airy.
